Vex is a step up from Lego Mindstorms - it offers much more of a challenge, and much more precision and accuracy. VEX is also made out of metal, not plastic. It is programmed using C. There are many teams out there for VEX.
RCX is an older version of Mindstorms. It revolves around the "yellow brick": an intelligent LEGO brick that can be programmed via a computer. It is currently being phased out and will soon be outdated.
NXT is a newer version of Mindstorms that revolves around the "white brick", an intelligent LEGO brick that can be programmed via a computer using a graphical, inutitive interface. It is in use by many school districts.
3pi is a light, fast, versatile robot that can be programmed to do many things using its LCD display, buttons, and light sensors. Like VEX, it is programmed in C. It is not as common as VEX or Lego Robotics, but it is still a good idea to study this.
